Then let the "V" notch on the sharpener straddle the blade, and use your thumb to apply light pressure as you draw the AccuSharp down past the point of the blade. Having spent hundreds of dollars over the years on various electric sharpeners that were a pain to use and in my unskilled hands produced dubious results, I was intrigued by this very inexpensive simple looking device on Amazon. But for the reviews, I would have assumed that it could not work.
Was I ever wrong. It is great. A few simple strokes, and dull useless knives suddenly slice through things perfectly. Even roll sausage that always came out a squashed mess now slices into lovely round disks. I am in the process of giving one to everyone I know. It is wonderful when something actually works. A delight.

After toting my cooking knives around in my car to drop off at the sharpening shop, never seeming to catch them open, I decided to try again at home. I chose the AccuSharp 001 and was very happy with it to say the least. Within minutes I was slicing and dicing again with "new" knives. Very happy. Would recommend them hands down.
